Butter Beans Bring Back Childhood Memories
My grandmother used to make the most wonderful, tender butter beans I’ve ever tasted. And this is coming from a girl who to this day can’t stand lima beans. In fact, I get goose bumps (and not the good kind), just thinking about them. But there’s just something that changes them when they are turned into butter beans. Unfortunately grandma never got around to writing down her recipe for these delicious buttery beans.
I’ve since tried all kinds of different bean recipes, but I just can’t get them quite right. I’m not ready to give up though. There are literally hundreds of butter bean recipes on the internet and with some tweaking and my childhood memories of watching grandma cook these beans, I’m sure I’ll be able to replicate her dish sometime. And when I do, I’ll be sure to write the recipe down. Until then, I’ll just keep trying and to be honest, I’m actually enjoying this process of discovery. As an added side-benefit, I’m also finding all kinds of recipes for other dishes. I’ve been cooking up a storm and expanding our meal horizon quite a bit in the process.
