Creamy Corn Potato Chowder Is Easier Than Ever
My family used to turn their noses up at the mention of corn chowder until I started making my crock pot corn chowder. It’s really called Corn Potato Chowder in my house because the potatoes play a big part in the success of this dish. The potatoes add just the right creaminess and heartiness to the chowder and make this soup or chowder a real meal-in-a-bowl.
Because this is one of my crock pot recipes that is meatless, we often turn to this meal when we’re at the end of the paycheck. Without meat, we can feed our family and even some drop-in neighbor kids for a fraction of the cost of a meat-based meal. We add bacon for flavor and serve a little crusty bread alongside just to stretch the chowder out a bit. I especially like making chowder in the crock pot because, like all soups that have milk as an ingredient, it takes some watching on top of the stove to make sure it doesn’t boil or scorch. The crock pot is the perfect way to slow simmer this fabulous Corn Chowder.
